  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg (optional)
  • 3 large eggs, room temperature
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) packed light brown sugar
  • 1 cup (240ml) vegetable oil (can substitute with melted coconut oil)
  • 1 teaspoon pure vanilla extract
  • 2 cups (about 300g) grated zucchini, lightly squeezed to remove excess water
  • 1 cup (175g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Grate the zucchini using a box grater or food processor. Place in a clean kitchen towel and gently squeeze out excess moisture, leaving some moisture for tenderness.
  3. In a large mixing bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set aside.
  4. In another bowl, beat the eggs with granulated sugar and brown sugar until light and fluffy, about 2-3 minutes.
  5. Slowly drizzle in the vegetable oil and vanilla extract, mixing until smooth.
  6. Fold the grated zucchini gently into the wet mixture until evenly distributed.
  7. Gradually add the dry ingredients to the wet ingredients, folding carefully with a spatula until just combined. A few lumps are okay; avoid overmixing.
  8. Fold in the semi-sweet chocolate chips evenly throughout the batter.
  9. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  10. Bake for 55-65 minutes, starting to check at 55 minutes by inserting a toothpick in the center. It is done when the toothpick comes out clean or with a few moist crumbs.
  11. Let the bread cool in the pan for 15 minutes, then transfer to a cooling rack to cool completely before slicing.

Notes

Squeeze zucchini to remove excess water but retain some moisture for softness. Avoid overmixing batter to keep bread tender. Tent foil over bread if top browns too quickly. Baking times may vary depending on zucchini moisture and oven.
