These soft and thick peanut butter blossom cookies are topped with a chocolate kiss and come together in about 25 minutes. They’re the perfect nostalgic treat for any occasion.

Ingredients

Scale
  • 1/2 cup unsalted butter, softened (1 stick, 113 grams)
  • 1/2 cup creamy peanut butter (130 grams)
  • 1/2 cup granulated sugar (100 grams)
  • 1/3 cup packed brown sugar (70 grams)
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour (190 grams)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • About 24 chocolate kiss candies, unwrapped
  • Extra granulated sugar for rolling (about 1/4 cup)

Instructions

  1. Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes with a hand mixer on medium speed. Scrape down the sides halfway through.
  3. Beat in the peanut butter until fully combined, about 1 minute.
  4. Add the egg and vanilla extract, beating until just combined.
  5. In a small bowl, whisk together the flour, baking soda, and salt.
  6. Gradually add the flour mixture to the wet ingredients, mixing on low speed until no white streaks remain. Do not overmix.
  7. Scoop rounded tablespoons of dough (about 1.5 tablespoons each) and roll into smooth balls. You should get about 24 balls. If the dough is too sticky, refrigerate for 15 minutes.
  8. Roll each dough ball in the extra granulated sugar until coated. Place on prepared baking sheets about 2 inches apart.
  9. Bake for 10-12 minutes. The cookies should look puffed and slightly cracked on top; the centers will still look soft.
  10. Immediately after removing from the oven, gently press a chocolate kiss into the center of each cookie. Press just until the cookie cracks slightly around the edges.
  11. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use regular creamy peanut butter (like Jif or Skippy) for best results; natural peanut butter will cause spreading. Unwrap chocolate kisses while cookies bake to save time. For softer cookies, bake for 10 minutes; for firmer, bake for 12. Cookies taste even better the next day.
