These easy candy corn sugar cookie bars are the ultimate fall party treat. They have a dense, buttery sugar cookie base topped with festive candy corn, and they come together in one bowl with no fancy equipment.

  • 1 large egg, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour

  • 1 1/2 cups candy corn
  • Optional: 1/4 cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang on the two long sides.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light, fluffy, and pale, about 2 to 3 minutes.
  3. Add the egg and vanilla extract, and stir until well combined and smooth.
  4. In a separate small bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until the flour disappears. The dough should be soft and slightly sticky.
  6. Press the dough evenly into the prepared pan, making a layer about 1/4-inch thick.
  7. Gently press the candy corn into the dough, spacing them about 1/2 inch apart, leaving the tops exposed.
  8. Bake for 18 to 22 minutes, until the edges are lightly golden and the center is set. A toothpick inserted in the center should come out clean or with a few moist crumbs.
  9. Let the bars cool completely in the pan on a wire rack, about 1 hour.
  10. Optional: Melt white chocolate chips in the microwave in 20-second intervals, then drizzle over cooled bars. Let set for 10 minutes.
  11. Use the parchment handles to lift the bars out of the pan. Slice into 24 squares (6 rows by 4 rows) using a sharp knife, wiping the knife clean between cuts.
