Creamy Garlic Scape Potato Soup Recipe Easy Homemade with Cheddar Croutons

  • 2 tablespoons unsalted butter
  • 1 medium onion, finely chopped
  • 1 pound garlic scapes, chopped into 1-inch pieces
  • 4 medium Yukon Gold potatoes, peeled and diced
  • 4 cups vegetable or chicken broth (low sodium)
  • 1 cup heavy cream
  • Salt and freshly ground black pepper, to taste
  • 1 cup sharp cheddar cheese, cut into 1/2-inch cubes
  • 1 tablespoon olive oil or melted butter

Instructions

  1. Melt the butter in a large pot over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent and soft but not browned.
  2. Add the chopped garlic scapes and cook for another 4–5 minutes until softened and fragrant.
  3. Add the diced Yukon Gold potatoes and stir to combine. Pour in the 4 cups of broth. Bring to a boil, then reduce to a simmer. Cover and cook for about 20 minutes until potatoes are fork-tender.
  4. Remove the pot from heat. Puree the soup using an immersion blender until smooth and creamy. If using a regular blender, blend in batches carefully.
  5. Return the pureed soup to low heat. Stir in the heavy cream and season with salt and freshly ground black pepper to taste. Warm through for 3–4 minutes without boiling.
  6. Preheat oven to 400°F (200°C). Toss cheddar cubes with olive oil or melted butter on a baking sheet. Roast for 8–10 minutes, turning halfway through, until golden and crispy.
  7. Ladle soup into bowls and top generously with cheddar croutons.

Notes

If soup is too thick, add more broth or cream to desired consistency. Season gradually with salt and pepper. Make cheddar croutons last minute to keep them crispy. Yukon Gold potatoes provide the best creamy texture. For vegan version, substitute butter with olive oil and heavy cream with coconut or cashew cream, and use vegetable broth.
