A lean, tender meatloaf made with ground turkey and oats, slow-cooked in a crockpot with a sweet-tangy brown sugar glaze. Perfect for busy weeknights, meal prep, or potlucks.

  • 2 pounds lean ground beef (90/10 or 93/7)
  • 1 cup rolled oats (not instant)
  • 1 medium yellow onion, finely diced
  • 2 large eggs, lightly beaten
  • 1/2 cup milk (any kind)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup ketchup
  • 1/2 cup ketchup (for glaze)
  • 1/3 cup brown sugar, packed
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard (optional)
  • 1/2 teaspoon garlic powder (for glaze)

Instructions

  1. Line your slow cooker with parchment paper or aluminum foil, leaving overhang for easy removal.
  2. In a small bowl, whisk together 1/2 cup ketchup, 1/3 cup packed brown sugar, 1 tablespoon apple cider vinegar, 1 teaspoon Dijon mustard (if using), and 1/2 teaspoon garlic powder. Set aside.
  3. Heat a small skillet over medium heat with a drizzle of olive oil. Add the finely diced onion and cook for 3-4 minutes until soft and translucent. Let cool.
  4. In a large mixing bowl, combine 2 pounds lean ground beef, 1 cup rolled oats, the sautéed onion, 2 lightly beaten eggs, 1/2 cup milk, 2 tablespoons Worcestershire sauce, 1 teaspoon garlic powder, 1 teaspoon smoked paprika, 1 teaspoon salt, 1/2 teaspoon black pepper, and 1/4 cup ketchup. Mix with your hands until just combined.
  5. Transfer the meat mixture to the lined crockpot and shape into a loaf, leaving space around the edges.
  6. Pour about half of the glaze over the top of the meatloaf, spreading evenly.
  7. Cover and cook on LOW for 4-6 hours or on HIGH for 2-3 hours. About 30 minutes before done, brush remaining glaze over the top.
  8. Carefully lift the meatloaf out using the parchment overhang. Let rest for 10 minutes before slicing into 1-inch thick pieces. Serve with extra glaze.

Notes

For best results, cook on LOW. Let meatloaf rest 10 minutes before slicing. Double the glaze if you love extra. Use a meat thermometer to ensure internal temperature reaches 160°F (71°C).
