These baked spinach ricotta lasagna rollups are the perfect make-ahead dish for gatherings. Each rollup is a perfect package of creamy ricotta, tender spinach, and gooey mozzarella, baked in rich marinara sauce.

Ingredients

Scale
  • 15 ounces whole milk ricotta cheese
  • 10 ounces fresh spinach
  • 1 large egg, lightly beaten
  • 1 ½ cups shredded mozzarella cheese, divided
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 12 lasagna noodles
  • 3 cups marinara sauce
  • 1 ½ cups shredded mozzarella cheese (for topping)
  • ¼ cup fresh basil leaves, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Spread ½ cup of marinara sauce evenly across the bottom of a 9×13-inch baking dish.
  2. Cook the lasagna noodles in a large pot of salted boiling water until al dente, about 8-10 minutes. Drain and lay flat on parchment paper or a clean towel. Pat dry with paper towels.
  3. While noodles cook, wilt the spinach in a large skillet over medium heat, stirring constantly, about 2-3 minutes. Let cool, then chop finely.
  4. In a medium bowl, combine ricotta, beaten egg, 1 cup mozzarella, Parmesan, garlic, nutmeg, salt, and pepper. Add chopped spinach and stir until well combined.
  5. Lay a cooked noodle flat. Spread 2-3 tablespoons of ricotta mixture evenly over the noodle, leaving a ½-inch border at each end. Roll into a tight spiral and place seam-side down in the prepared dish. Repeat with remaining noodles.
  6. Pour remaining 2 ½ cups marinara sauce over the rollups. Sprinkle remaining ½ cup mozzarella on top.
  7. Bake for 25-30 minutes, until sauce is bubbling and cheese is melted and golden. Optionally, broil for 2-3 minutes for a browner top.
  8. Let rest for 5-10 minutes before serving. Garnish with fresh basil and extra Parmesan if desired.
