  • ½ cup (120ml) whole milk, warmed (or almond milk for dairy-free)
  • 1 large egg, room temperature
  • 1 teaspoon salt
  • Optional: 1 tablespoon honey

Instructions

  1. Proof the yeast: In a small bowl, combine warm water and sugar. Sprinkle yeast over the surface and stir gently. Let sit for 5-10 minutes until foamy.
  2. Mix dry ingredients: In a large bowl, whisk together gluten-free flour blend, xanthan gum, and salt.
  3. Add wet ingredients: Add the proofed yeast mixture, warmed milk, softened butter, egg, and optional honey to the dry ingredients. Mix until dough starts to come together.
  4. Knead the dough: Knead for 5-7 minutes using a stand mixer with dough hook or by hand on a lightly floured surface until soft and slightly sticky.
  5. First rise: Shape dough into a ball, place in a greased bowl, cover, and let rise in a warm place for about 45 minutes until doubled in size.
  6. Shape rolls: Deflate dough and divide into 12 equal pieces (about 2 oz / 57g each). Roll each into a smooth ball and arrange on a greased baking sheet or round cake pan.
  7. Second rise: Cover shaped rolls and let rise for another 20-30 minutes until puffy and nearly doubled.
  8. Bake: Preheat oven to 375°F (190°C). Bake rolls for 18-22 minutes until golden brown and hollow sounding when tapped.
