  • 34 habanero peppers, stems removed (for medium heat; 56 for spicy)
  • 1/2 cup white vinegar
  • 1/4 cup water
  • 3 garlic cloves, smashed
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon salt
  • 12 tablespoons honey or agave (optional, if mangoes aren’t sweet enough)
  • 1 teaspoon fresh ginger, grated (optional)
  • 1/2 teaspoon smoked paprika (optional)
  • 1/4 teaspoon cumin (optional)
  • 1/4 cup carrot, chopped (optional)

Instructions

  1. Prep your ingredients (5 minutes). Peel and chop the mangoes into rough chunks. Smash the garlic cloves with the flat side of your knife. Remove the stems from the habaneros—if you want less heat, cut them in half and scrape out the seeds and white pith. Wear gloves.
  2. Cook the base (10 minutes). In a medium saucepan, combine the chopped mangoes, habaneros, smashed garlic, and water. Bring to a simmer over medium heat, then reduce to low, cover, and cook for 8-10 minutes until the mangoes are very soft and the habaneros are tender.
  3. Add the liquids (2 minutes). Remove the pan from heat. Stir in the white vinegar, lime juice, and salt. If using honey or agave, add it now. Let the mixture cool for about 5 minutes.
  4. Blend until smooth (2-3 minutes). Carefully transfer the mixture to a blender. Start on low speed, then gradually increase to high. Blend for 1-2 minutes until completely smooth. If the sauce is too thick, add water one tablespoon at a time until it reaches your desired consistency.
  5. Taste and adjust (2 minutes). Taste the sauce and adjust sweetness (add more honey), heat (blend in another half habanero), or salt as desired.
  6. Strain (optional) (5 minutes). For an ultra-smooth sauce, pour it through a fine-mesh strainer into a bowl, pressing on the solids with a spatula.
  7. Bottle and store (5 minutes). Using a funnel, pour the sauce into clean glass bottles or jars, leaving about half an inch of headspace. Let it cool completely before refrigerating.

Notes

Wear gloves when handling habaneros to avoid skin irritation. The sauce keeps for up to 3 weeks in the refrigerator and freezes well in ice cube trays for up to 6 months. For a milder version, replace habaneros with a single jalapeño (seeds removed).
