Spooky Baked Brie with Cranberries: Easy Halloween Appetizer

A warm, gooey baked brie wrapped in flaky puff pastry like a mummy, filled with tart cranberries and aromatic rosemary. This spooky yet delicious appetizer is perfect for Halloween parties and is ready in under 30 minutes.

  • 1 (8-ounce) wheel of Brie cheese
  • 1 sheet of puff pastry, thawed
  • ⅓ cup whole berry cranberry sauce
  • 2 tablespoons dried cranberries
  • 1 tablespoon orange juice
  • 1 teaspoon fresh rosemary, finely chopped
  • ¼ teaspoon ground cinnamon
  • 1 large egg, beaten
  • 1 tablespoon sliced almonds (optional)
  • Flaky sea salt, for finishing

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, combine the whole berry cranberry sauce, dried cranberries, orange juice, chopped rosemary, and cinnamon. Stir well and let sit for about 5 minutes.
  3. Using a sharp knife, carefully slice off the top rind of the brie wheel, exposing the creamy cheese underneath. Leave the sides and bottom rind intact.
  4. On a lightly floured surface, gently roll out the thawed puff pastry sheet into a rough 12×12 inch square. Cut the pastry into 1-inch wide strips (about 6-8 strips).
  5. Place the brie wheel, cut-side up, in the center of the prepared baking sheet. Spoon the cranberry mixture generously over the top of the brie.
  6. Wrap the brie with the pastry strips like a mummy, laying one strip across the top and tucking the ends underneath. Continue until the brie is completely covered, leaving a small gap at the top for the cranberries to peek through.
  7. For spooky details, press two sliced almonds into the pastry near the top for ‘eyes’. Use a small piece of pastry to form a mouth or nose if desired.
  8. Using a pastry brush, coat the entire pastry mummy with the beaten egg. Sprinkle with flaky sea salt.
  9. Bake for 20-25 minutes, or until the pastry is puffed up and deep golden brown, and the cheese is bubbling up slightly from the gaps.
  10. Let the baked brie rest on the baking sheet for at least 10 minutes before serving. Transfer to a serving board and enjoy warm.

Notes

Don’t skip removing the top rind of the brie for the perfect melty consistency. Let the pastry rest in the fridge if it gets too warm while working. The 10-minute rest after baking is crucial to prevent the cheese from running everywhere. For a gluten-free version, use certified gluten-free puff pastry. Leftovers can be stored in the refrigerator for up to 2 days and reheated in a 350°F oven for 10 minutes.
