A quick and refreshing mocktail combining earthy rosemary syrup with tart pomegranate juice and sparkling water, perfect for weeknights or impromptu celebrations.

Ingredients

Scale
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 2–3 sprigs fresh rosemary (plus extra for garnish)
  • 1/2 cup 100% pomegranate juice
  • 1/2 cup chilled sparkling water or club soda
  • 1 tablespoon rosemary simple syrup
  • Ice cubes (enough to fill your glass)
  • Optional: 1 tablespoon fresh lime juice
  • Optional: Pomegranate arils for garnish

Instructions

  1. Make the rosemary simple syrup: In a small saucepan, combine sugar and water. Bring to a gentle simmer over medium heat, stirring occasionally until sugar dissolves (2-3 minutes). Add fresh rosemary sprigs, remove from heat, and let steep for 15-20 minutes. Gently press rosemary with a spoon to release more flavor.
  2. Strain and cool the syrup: Pour syrup through a fine-mesh strainer into a glass jar or measuring cup. Discard rosemary sprigs. Let cool to room temperature. Syrup thickens slightly as it cools.
  3. Chill your glass (optional): Pop serving glass in the freezer for 5 minutes or fill with ice water while prepping, then dump water out.
  4. Build the mocktail: Fill glass with ice cubes. Pour in pomegranate juice, rosemary simple syrup, and lime juice if using. Stir with a bar spoon.
  5. Top with sparkling water: Slowly pour chilled sparkling water into the glass to preserve carbonation. Stir once or twice to combine.
  6. Garnish and serve: Add a fresh rosemary sprig (slap between palms first to release oils). Sprinkle pomegranate arils on top if desired. Serve immediately.

Notes

Make a double batch of rosemary simple syrup on Sunday and keep in the fridge for up to two weeks. For best results, chill all ingredients before assembling. Add sparkling water last to preserve carbonation.
