  • 1 teaspoon Cream of Tartar
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 1/2 teaspoons Pumpkin Pie Spice
  • 1/4 cup (50g) Extra Sugar for Rolling
  • 1 teaspoon Cinnamon (for rolling)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, cream of tartar, salt, and pumpkin pie spice.
  3. In a large bowl, beat softened butter and granulated sugar until light and fluffy (2-3 minutes).
  4. Mix in pumpkin puree until fully combined and smooth.
  5. Gradually add dry ingredients to wet ingredients, mixing on low speed or by hand until just combined. Do not overmix.
  6. In a small bowl, mix extra sugar and cinnamon for the coating.
  7. Scoop tablespoon-sized balls of dough and roll them in the cinnamon sugar mixture until fully coated.
  8. Place dough balls on prepared baking sheets, leaving 2 inches between them for spreading.
  9. Bake for 10-12 minutes until edges are set but centers still look slightly soft.
  10. Let cookies sit on the baking sheet for 5 minutes to set before transferring to a wire rack.

Notes

Ensure pumpkin puree is 100% pure, not pie filling. If dough is too sticky, chill for 15 minutes. Do not overbake; cookies continue to cook on the hot pan. Store in an airtight container with a slice of bread to maintain softness.
