A quick, forgiving, and comforting small-batch pumpkin dump cake tailored for two people. It features a soft spiced pumpkin cake base topped with a crunchy, buttery pecan and brown sugar crumble.

Ingredients

Scale
  • 1 cup pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 15-ounce box yellow or spice cake mix
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1/2 cup chopped pecans
  • 2 tablespoons brown sugar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Lightly grease a 10-12 oz ramekin with butter or cooking spray.
  3. In a small bowl, whisk together pumpkin puree, pumpkin pie spice, and vanilla extract until smooth.
  4. Sprinkle half of the cake mix (about 3/4 cup) evenly over the bottom of the ramekin.
  5. Spoon the pumpkin mixture over the cake mix layer and spread evenly.
  6. Sprinkle the remaining cake mix over the pumpkin layer.
  7. Scatter chopped pecans and brown sugar evenly on top.
  8. Slowly pour melted butter over the entire dessert.
  9. Place ramekin on a baking sheet and bake for 25-30 minutes until top is golden brown and bubbly.
  10. Let cool for 5 minutes before serving warm.

Notes

Use pure pumpkin puree, not pumpkin pie filling. Ensure butter is melted but not boiling hot. Toast pecans for extra crunch. Let cake cool for 5 minutes to allow it to set. Can be made gluten-free or dairy-free with substitutions.
