  • ½ cup honey (120 ml)
  • ⅓ cup soy sauce (80 ml), low-sodium recommended
  • 4 large garlic cloves, minced
  • 2 tablespoons rice vinegar (30 ml)
  • ¼ cup water (60 ml)
  • 2 tablespoons cornstarch (16 grams)
  • 2 tablespoons water (30 ml) for slurry
  • 1 teaspoon sesame seeds (optional)
  • 2 green onions, thinly sliced

Instructions

  1. In a mixing bowl, combine ½ cup honey, ⅓ cup soy sauce, 4 minced garlic cloves, 2 tablespoons rice vinegar, and ¼ cup water. Stir until well mixed and set aside.
  2. Place 2 pounds of boneless, skinless chicken thighs evenly in the slow cooker. Pat dry if desired.
  3. Pour the honey garlic sauce evenly over the chicken, coating well. Stir gently if needed.
  4. Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours until chicken is tender and easily pierced with a fork.
  5. About 30 minutes before serving, mix 2 tablespoons cornstarch with 2 tablespoons water in a small bowl until smooth to make a slurry.
  6. Remove chicken and place on a serving dish; cover loosely with foil to keep warm.
  7. Pour remaining sauce from slow cooker into a skillet over medium heat. Stir in cornstarch slurry and cook, stirring constantly, until sauce thickens and becomes sticky, about 3 to 5 minutes. Alternatively, do this step in the slow cooker on high.
  8. Pour the thickened glaze back over the chicken, coating each piece generously.
  9. Garnish with sesame seeds and sliced green onions. Serve hot over steamed rice, noodles, or greens.

Notes

Use chicken thighs for juicier meat; breasts can dry out if overcooked. Do not skip the cornstarch slurry to achieve the perfect sticky glaze. Avoid opening the slow cooker lid frequently to maintain cooking temperature. Fresh minced garlic is essential for best flavor. Slow cooker liners can help with cleanup. Sauce thickening can be done in the slow cooker or on the stove for better control.
