A festive and easy-to-make patriotic flag cake featuring a moist white or yellow cake base, topped with a smooth cream cheese frosting and fresh berries arranged to mimic the American flag. Perfect for Fourth of July and other patriotic celebrations.

Ingredients

Scale
  • 1 box white or yellow cake mix (around 15.25 oz / 432 g)
  • 1 cup water (240 ml)
  • 1/3 cup vegetable oil (80 ml)
  • 3 large eggs
  • 8 oz (225 g) cream cheese, softened
  • 1/2 cup (115 g) unsalted butter, softened
  • 4 cups (480 g) powdered sugar, sifted
  • 1 tsp vanilla extract
  • 23 tbsp milk or heavy cream (adjust for desired consistency)
  • 1 pint fresh strawberries, sliced
  • 1 pint fresh blueberries
  • Optional: fresh raspberries or blackberries for extra color contrast

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×13 inch pan lightly with butter or non-stick spray.
  2. In a large bowl, combine the cake mix, water, vegetable oil, and eggs. Use an electric mixer on medium speed for about 2 minutes until smooth.
  3. Pour the batter into the pan and spread it evenly with a spatula. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  4. Cool the cake completely on a wire rack for at least 1 hour.
  5. In a mixing bowl, beat the softened cream cheese and butter together until creamy and smooth, about 2 minutes. Gradually add the powdered sugar, mixing on low speed then increasing speed until fluffy. Add vanilla and milk one tablespoon at a time until spreadable consistency is reached.
  6. Frost the cooled cake evenly with the cream cheese frosting using a spatula.
  7. Arrange blueberries in the upper left corner to form the ‘star’ section of the flag. Create stripes by alternating rows of sliced strawberries and plain frosting.
  8. Chill the cake in the fridge for at least 30 minutes before serving to let the frosting set and berries meld.

Notes

Cool the cake completely before frosting to avoid melting the frosting. Use room temperature cream cheese and butter for smooth frosting. For a glossy fruit finish, brush berries with warmed apricot jam or honey. Fresh berries are preferred but thawed frozen berries can be used if drained well. Variations include gluten-free, vegan, and chocolate cake base options.
