A quick and easy flatbread with sweet figs, salty prosciutto, tangy cheese, and a honey balsamic glaze, perfect for entertaining or a fast, fancy meal.

Ingredients

Scale
  • 1 large flatbread or pizza dough (about 1012 inches)
  • 68 fresh figs, stemmed and sliced into quarters
  • 46 thin slices prosciutto, torn into pieces
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • 2 tablespoons olive oil, plus extra for brushing
  • ½ cup crumbled goat cheese or gorgonzola
  • 1 cup fresh arugula
  • Salt and black pepper to taste
  • Optional: fresh thyme leaves or extra balsamic glaze for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). If using a pizza stone, place it in the oven while preheating.
  2. In a small bowl, whisk together 3 tablespoons balsamic vinegar and 2 tablespoons honey to make the glaze. Set aside.
  3. Wash and dry the figs. Cut off the hard stem end, then slice each fig into quarters.
  4. Tear the prosciutto slices into 2-3 inch pieces.
  5. Place the flatbread or pizza dough on a parchment-lined baking sheet. If using pizza dough, stretch it into an oval or rectangle about ¼-inch thick. Brush the surface with 1 tablespoon olive oil.
  6. Arrange the torn prosciutto pieces evenly over the flatbread. Scatter the fig quarters on top, pressing them gently into the dough. Crumble the goat cheese or gorgonzola over everything.
  7. Drizzle about half of the honey balsamic glaze over the flatbread. Reserve the rest for finishing.
  8. Bake for 10-12 minutes, or until the edges are golden brown and crispy, and the cheese is melted and bubbly.
  9. Remove from the oven and let cool for 1-2 minutes. Top with fresh arugula, then drizzle the remaining glaze over the top. Sprinkle with flaky sea salt and fresh thyme if desired.
  10. Slice into squares or wedges and serve warm or at room temperature.

Notes

Best served within 30 minutes of baking. For a thicker glaze, simmer the honey and balsamic in a small saucepan over low heat for 2-3 minutes. Don’t overload the flatbread with toppings to prevent sogginess.
