Savory Everything Bagel Breakfast Casserole with Sausage and Cheddar

A hearty and flavorful breakfast casserole combining the bold crunch of everything bagel seasoning with savory sausage and sharp cheddar, baked into a creamy custard base. Perfect for busy mornings, brunch gatherings, or holiday meals.

  • 2 tablespoons everything bagel seasoning (blend of poppy seeds, sesame seeds, dried garlic, onion flakes, and salt)
  • 1 pound breakfast sausage (spicy or mild pork sausage)
  • 2 cups shredded sharp cheddar cheese (about 200g)
  • 8 large eggs, room temperature
  • 2 cups whole milk or half-and-half (480ml)
  • 4 large everything bagels, cut into 1-inch cubes (day-old preferred)
  • 1 medium yellow onion, finely diced
  • 1 tablespoon butter
  • Salt and pepper to taste
  • Optional: chopped chives or parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Heat a large skillet over medium heat. Add butter and sauté the diced onion until translucent, about 3-4 minutes.
  3. Add the sausage to the skillet, breaking it up with a spoon, and cook until browned and cooked through, about 6-8 minutes. Drain excess fat and set aside.
  4. While the sausage cools slightly, toss the bagel cubes in a large bowl. Optionally, lightly toast the cubes for extra crunch.
  5. In a large bowl, whisk together the eggs, milk, salt (about 1/2 teaspoon), and pepper until fully combined and slightly frothy.
  6. Add the cooked sausage and onions to the bread cubes, then sprinkle in the shredded cheddar. Gently fold everything together to distribute evenly.
  7. Pour the egg mixture over the bread, sausage, and cheese. Press down lightly with a spatula so the bread soaks up the custard well. Let it rest for 5-10 minutes to absorb fully.
  8. Sprinkle 2 tablespoons of everything bagel seasoning evenly across the top.
  9. Bake in the preheated oven for 45-50 minutes, or until the eggs are set and the top is golden brown. A toothpick inserted in the center should come out clean.
  10. Allow the casserole to cool for about 10 minutes before slicing and serving.

Notes

Use day-old bagels to prevent sogginess. Let the casserole rest 5-10 minutes before baking to allow custard absorption. If top browns too quickly, tent with foil halfway through baking. Leftovers reheat well in oven or microwave. For gluten-free, use gluten-free bagels; for dairy-free, substitute milk and cheese accordingly; for vegetarian, replace sausage with mushrooms or tempeh.
