A light and fresh summer drink blending juicy watermelon, tangy lime, and tropical coconut rum into a silky slushie perfect for hot days and gatherings.

  • 4 cups (600g) fresh seedless watermelon chunks
  • Juice of 2 medium limes (about 3 tablespoons or 45ml)
  • 3 ounces (90ml) coconut rum (e.g., Malibu)
  • 1 to 2 tablespoons (15-30ml) simple syrup or honey
  • 2 cups (about 300g) ice cubes
  • Optional: fresh mint leaves for garnish
  • Optional: a tiny pinch of salt

Instructions

  1. Cut about 4 cups (600g) of seedless watermelon into chunks. Chill in the fridge for at least an hour if possible.
  2. Squeeze the juice from 2 medium limes (about 3 tablespoons or 45ml), straining out seeds and pulp.
  3. In a high-speed blender, combine watermelon chunks, fresh lime juice, 3 ounces (90ml) coconut rum, and 1 to 2 tablespoons (15-30ml) simple syrup or honey. Add a tiny pinch of salt if using.
  4. Add about 2 cups (300g) of ice cubes to the blender. Crushed ice is preferred for smoother texture.
  5. Pulse the blender on high for 30-45 seconds until smooth and slushie-like with no large ice chunks. Adjust consistency by adding cold water or more lime juice if too thick, or more ice if too thin.
  6. Taste and adjust sweetness or lime juice as desired, blending briefly again if needed.
  7. Serve immediately in chilled glasses or mason jars. Garnish with fresh mint leaves and a lime wheel if desired.

Notes

Use ripe, juicy watermelon for best flavor. Crushed ice yields smoother texture. Chill glasses beforehand for extra refreshment. For non-alcoholic version, omit coconut rum and add coconut water or sparkling water. Avoid overblending to maintain slushie texture. Adjust sweetness after blending to taste.
