  • 1 cup freshly squeezed lemon juice (about 45 large lemons)
  • 3/4 cup granulated sugar (adjust to taste)
  • 4 cups cold water
  • 4 cups chilled club soda or sparkling water
  • Ice cubes as needed
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Place 1 cup of sliced strawberries into a blender and blend until smooth, about 30 seconds. For chunkier texture, pulse a few times.
  2. In a small saucepan, combine granulated sugar and 1 cup water. Heat over medium, stirring constantly until sugar dissolves completely, about 3-4 minutes. Remove from heat and let cool.
  3. Squeeze fresh lemons to get 1 cup of juice. Strain to remove seeds and pulp.
  4. In a large pitcher or punch bowl, mix the cooled simple syrup, fresh lemon juice, remaining 3 cups cold water, and strawberry puree. Stir gently to combine.
  5. Just before serving, pour in chilled club soda or sparkling water. Stir gently to keep bubbles lively.
  6. Add ice cubes or frozen strawberries to the punch. Float whole sliced strawberries and sprigs of fresh mint leaves on top. Serve immediately with optional lemon wedges.

Add sparkling water last and stir gently to preserve bubbles. Use frozen strawberries as ice cubes to avoid dilution. Adjust sugar to taste and consider alternatives like honey or agave syrup. Prepare syrup and puree ahead and refrigerate for convenience.
