  • 1 to 1 ½ cups frozen mixed berries (strawberries, blueberries, raspberries)
  • ½ cup fresh lemon juice (about 23 lemons)
  • ¼ cup simple syrup (homemade or store-bought)
  • 1 cup cold water
  • 1 cup ice cubes (optional, for extra frostiness or if using fresh berries)
  • Fresh mint leaves (for garnish)
  • Lemon slices (optional, for garnish)

Instructions

  1. Roll each lemon firmly on the counter to soften, then cut and juice them until you have about ½ cup (120 ml) of fresh lemon juice. Remove any seeds.
  2. If making your own simple syrup, combine ¼ cup sugar and ¼ cup water in a small saucepan over low heat. Stir until the sugar dissolves completely, then let it cool.
  3. Add 1 to 1 ½ cups frozen mixed berries, ½ cup lemon juice, ¼ cup simple syrup, and 1 cup cold water to the blender. Add 1 cup ice cubes if you want it extra frosty.
  4. Pulse the mixture for about 30-45 seconds until you get a slushy, smooth consistency. Scrape down the sides if needed and blend again briefly.
  5. Taste and adjust sweetness or tartness by adding more syrup or lemon juice as desired. Blend again for a few seconds after adjustments.
  6. Pour into tall glasses and garnish with fresh mint leaves and lemon slices. Serve immediately.

Notes

Use frozen berries instead of ice cubes to avoid watering down the drink. Adjust sweetness and tartness to taste. For fizz, add a splash of sparkling water after blending. Prepare ahead by blending all except ice and garnish, refrigerate, then blend with ice before serving.
