  • 2 tbsp unsweetened cocoa powder
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter (113g), softened
  • 1 cup granulated sugar (200g)
  • 1 large egg, room temperature
  • ¾ cup buttermilk (180ml) (or ¾ cup milk + 1 tbsp vinegar)
  • 1 tsp vanilla extract
  • 2 tbsp beet juice (or red food coloring)
  • 1 tsp white vinegar
  • 8 oz cream cheese (225g), softened
  • ¼ cup unsalted butter (56g), softened
  • 1½ cups powdered sugar (180g), sifted
  • 1 tsp vanilla extract
  • 12 tbsp heavy cream (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, sift together flour, cocoa powder, baking soda, baking powder, and salt. Set aside.
  3. In a large bowl, beat softened butter and granulated sugar with an electric mixer until light and fluffy, about 3-4 minutes.
  4. Beat in egg, vanilla extract, beet juice (or red food coloring), and white vinegar until combined.
  5. Add dry ingredients in three parts, alternating with buttermilk, starting and ending with dry ingredients. Mix gently after each addition; do not overmix.
  6. Drop rounded tablespoons of batter about 2 inches apart on prepared baking sheets, making 18-20 rounds.
  7. Bake for 12-14 minutes until tops spring back when pressed and a toothpick comes out clean.
  8. Cool cakes on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
  9. For the filling, beat cream cheese and softened butter until smooth, about 2-3 minutes.
  10. Gradually add powdered sugar and vanilla extract, beating until fluffy. Add heavy cream if desired for lighter texture.
  11. Pair cooled cakes by size. Spread or pipe about 2 tbsp filling on one cake and sandwich with its partner.
  12. Chill assembled whoopie pies for at least 30 minutes before serving.

Notes

Use softened but not melted butter and cream cheese for best texture. Measure flour correctly by spooning and leveling. Avoid overmixing batter to keep cakes tender. Chill filling if too runny before assembling. Baking times may vary by oven; watch the first batch closely. For gluten-free, substitute flour with gluten-free blend and for dairy-free, use plant-based alternatives.
