Ingredients

Scale
  • 1 cup whole milk (240 ml)
  • 1/2 cup eggnog (120 ml)
  • 1 shot strong brewed coffee or 2 shots espresso (about 60 ml total)
  • 1 tablespoon brown sugar (12 grams)
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground cloves
  • Pinch of ground allspice (optional)
  • Whipped cream (for topping, optional)
  • Extra cinnamon stick (for garnish, optional)
  • Extra nutmeg (for garnish, optional)

Instructions

  1. Brew your coffee first. Start your coffee maker or espresso machine so it’s ready when you need it. If using instant espresso powder, mix it with hot water now and set aside. You want about 60 ml (1/4 cup) of strong coffee or a double shot of espresso.
  2. Combine the milk and eggnog in your saucepan. Pour in 1 cup whole milk and 1/2 cup eggnog. Don’t turn on the heat yet — just get them in the pot together.
  3. Add the brown sugar and spices. Sprinkle in 1 tablespoon brown sugar, 1/4 teaspoon nutmeg, 1/4 teaspoon cinnamon, 1/8 teaspoon cloves, and a pinch of allspice. Add the 1/4 teaspoon vanilla extract too. Give it a quick stir with your whisk to combine everything before heating.
  4. Heat over medium-low heat. Turn the burner to medium-low. You want to warm the mixture slowly, not boil it. Stir occasionally with your whisk. This takes about 2 to 3 minutes. You’ll know it’s ready when you see tiny bubbles forming around the edges — that’s the milk starting to steam. Don’t let it boil!
  5. Froth if desired. If you have a milk frother, take the saucepan off the heat and froth the warm milk mixture for about 15 seconds. If you don’t have a frother, just whisk vigorously for 20 to 30 seconds until it’s a bit foamy.
  6. Pour the coffee into your mug. Pour your brewed coffee or espresso into your mug first. This is important — pouring the coffee first helps it mix better with the milk.
  7. Pour the warm spiced milk over the coffee. Slowly pour the heated milk mixture into the mug. Hold back the foam with a spoon if you want to save it for the top, or just pour it all in. Give it a gentle stir.
  8. Top and serve immediately. Add a dollop of whipped cream if you’re using it. Grate a little fresh nutmeg on top or sprinkle a pinch of cinnamon. Stick a cinnamon stick in for stirring. Serve right away while it’s hot.

Notes

Don’t boil the milk mixture; heat slowly over medium-low. Mix spices into the milk before heating for best flavor. Taste and adjust sweetness as eggnog brands vary. Use extra strong coffee to avoid a diluted taste. Clean the saucepan immediately after use to prevent milk residue from sticking.
