  • 1 pound breakfast sausage links or patties, cut into 1-inch pieces
  • 2 bell peppers (any color), sliced into thick strips
  • 1 medium yellow onion, sliced into half-moons
  • 1 cup shredded cheese (cheddar, pepper jack, or Monterey Jack)
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 cup milk or cream
  • Optional: Fresh parsley or chives for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Place the sheet pan inside while it preheats.
  2. Brown the sausage: Heat a skillet over medium-high heat. Add the sausage pieces and cook for 5-7 minutes, stirring occasionally, until browned on all sides. Transfer to a plate using a slotted spoon, leaving the rendered fat in the skillet.
  3. Sauté the vegetables (optional but recommended): In the same skillet with the sausage fat, add the sliced peppers and onions. Cook for 3-4 minutes until they start to soften.
  4. Whisk the eggs: In a medium bowl, crack all 8 eggs. Add smoked paprika, garlic powder, salt, pepper, and milk if using. Whisk vigorously for about 30 seconds until uniform and slightly frothy.
  5. Assemble on the hot pan: Carefully remove the preheated sheet pan from the oven. Drizzle olive oil over the pan and tilt to coat. Spread the sautéed peppers and onions evenly across the pan. Scatter the browned sausage pieces over the vegetables. Pour the whisked eggs evenly over everything.
  6. Top with cheese: Sprinkle the shredded cheese evenly over the top.
  7. Bake for 15-18 minutes until the eggs are set and the edges are golden brown and crispy. The center should be just barely jiggly when shaken.
  8. Rest and serve: Remove from the oven and let rest for 2-3 minutes. Garnish with fresh parsley or chives if desired. Cut into squares and serve directly from the pan.

Notes

For best results, preheat the sheet pan to get crispy edges. Brown the sausage first for maximum flavor. Use parchment paper for zero cleanup. Adjust baking time based on your oven; start checking at 12 minutes.
