Quick Limoncello Spritz: Easy New Year’s Eve Cocktail

A bright, bubbly cocktail that comes together in under three minutes with just four ingredients. This happy accident turned into a go-to New Year’s Eve drink that feels fancy without the fuss.

Ingredients

  • 2 ounces (60 ml) limoncello
  • 3 ounces (90 ml) dry prosecco (Brut or Extra Dry)
  • 1 ounce (30 ml) soda water
  • Ice (large cubes preferred)
  • Lemon wheel or slice (for garnish, optional)
  • Fresh mint or rosemary sprig (for garnish, optional)

Instructions

  1. Chill your wine glass in the freezer for about 10 minutes (or rinse with cold water and dry quickly if short on time).
  2. Fill the glass about halfway with large ice cubes (3-4 large or 5-6 small).
  3. Measure and pour 2 ounces of limoncello over the ice.
  4. Slowly pour 3 ounces of chilled prosecco into the glass at an angle to preserve bubbles.
  5. Add 1 ounce of soda water.
  6. Stir gently once or twice with a bar spoon to combine without losing carbonation.
  7. Garnish with a lemon wheel and/or a sprig of rosemary (slap the rosemary between your hands first to release oils). Serve immediately.

Notes

Everything should be well-chilled to prevent dilution. Use large ice cubes for slower melting. Don’t stir too vigorously or the drink will go flat. For a non-alcoholic version, swap limoncello for lemon syrup or limoncello-flavored sparkling water and use non-alcoholic sparkling wine. Prep garnishes ahead of time for easy assembly.
