Ingredients

Scale
  • 1 pound fresh green beans, trimmed
  • 3–4 thin slices prosciutto
  • 1/3 cup freshly grated Parmesan cheese
  • 4 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Zest of 1/2 lemon (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper or aluminum foil.
  2. Lay the prosciutto slices in a single layer on half of the prepared baking sheet. Roast for 5 minutes, until the prosciutto starts to curl and turn golden at the edges.
  3. While the prosciutto roasts, rinse the green beans and pat them thoroughly dry. Trim the stem ends.
  4. In a large mixing bowl, combine the trimmed green beans, olive oil, minced garlic, salt, pepper, and red pepper flakes (if using). Toss with your hands until every bean is coated.
  5. Remove the baking sheet from the oven. Push the prosciutto to one side, then spread the green beans in a single layer on the other side.
  6. Return the sheet to the oven and roast for 10 minutes, flipping the beans and stirring the prosciutto halfway through.
  7. Sprinkle the grated Parmesan evenly over the green beans (not over the prosciutto). Roast for another 3-5 minutes, until the cheese is melted and golden.
  8. Remove from the oven. Let cool for 1 minute, then crumble the crispy prosciutto over the green beans. Toss gently to combine. Sprinkle with lemon zest if using. Serve immediately.

Notes

Dry the green beans thoroughly after washing to prevent steaming. Don’t overcrowd the pan—use two baking sheets if needed. Watch the Parmesan closely in the final minutes to prevent burning. For best results, grate your own Parmesan; pre-shredded contains anti-caking agents that prevent proper melting. The prosciutto pre-roast is essential for achieving a crispy texture.
