This quick creamy jalapeno cheddar corn casserole is a perfect side dish that comes together in under 30 minutes. It features sweet corn, sharp cheddar, and a subtle jalapeño kick, making it a crowd-pleaser for weeknights or gatherings.

Ingredients

Scale
  • 4 cups frozen corn kernels (about 20 ounces)
  • 4 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1 1/2 cups shredded sharp cheddar cheese, divided
  • 2 medium jalapeños, finely diced (seeds and membranes removed for less heat)
  • 3 tablespoons unsalted butter, melted
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika (optional)
  • Fresh cilantro, chopped (optional garnish)
  • Extra sliced jalapeño (optional garnish)
  • Crumbled bacon (optional garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8×8-inch baking dish with butter or non-stick spray.
  2. Dice the jalapeños: cut off stems, slice in half lengthwise, remove seeds and membranes if desired, then dice into small pieces (about 1/4 inch). Set aside about a tablespoon for garnish if desired.
  3. In a large mixing bowl, combine the softened cream cheese, sour cream, and melted butter. Stir until smooth and well combined.
  4. Add the frozen corn (no need to thaw), 1 cup of the shredded cheddar cheese, the diced jalapeños, garlic powder, onion powder, salt, pepper, and smoked paprika (if using). Stir until the corn is evenly coated.
  5. Pour the mixture into the prepared baking dish and spread into an even layer.
  6. Sprinkle the remaining 1/2 cup of shredded cheddar cheese evenly over the top. If reserved, add the extra diced jalapeño on top.
  7. Bake for 20-25 minutes, or until the casserole is bubbly around the edges and the top is golden brown. For extra browning, broil for the last 1-2 minutes, watching closely.
  8. Let the casserole rest for 5 minutes before serving. This allows it to set up for easier scooping.

Notes

Shred your own cheddar cheese for best melting. Let the casserole rest for 5 minutes after baking to achieve the perfect creamy texture. For a milder version, remove all seeds and membranes from jalapeños or substitute with canned diced green chiles. To make ahead, assemble up to 24 hours in advance and refrigerate; add 5 minutes to baking time.
