Instructions

  1. Preheat your oven to 275°F (135°C). Line a small baking sheet with parchment paper. Spread the ½ cup of white chocolate chips in a single, even layer on the sheet.
  2. Toast the white chocolate: Place the baking sheet in the oven and set a timer for 5 minutes. After 5 minutes, pull the sheet out and stir the chips. Return to the oven for another 3-5 minutes, until the chips are light golden brown and smell nutty and toasty. Watch carefully to avoid burning.
  3. Melt the toasted chips: Transfer the toasted white chocolate chips to a small saucepan. Add 1 tablespoon of unsalted butter and ¼ cup of the milk. Place over low heat and stir constantly until the chocolate is completely melted and the mixture is smooth, about 2-3 minutes.
  4. Blend everything together: Pour the melted chocolate mixture into a blender. Add the remaining ¾ cup of milk, ½ teaspoon of vanilla extract, and a pinch of salt. Pour in the 1 cup of strong brewed coffee or 2 shots of espresso. Blend on low speed, then increase to medium, for about 30 seconds, until smooth, frothy, and slightly thickened.
  5. Taste and adjust: If desired, add a teaspoon of sugar or honey and blend again. If too sweet, add another splash of coffee.
  6. Pour and serve: Pour the mocha into a large mug. Top with whipped cream, white chocolate shavings, or a dusting of cinnamon or cocoa powder if desired. Serve immediately.

Notes

Toast the white chocolate chips carefully—they burn quickly. Use a light-colored baking sheet to prevent burning. For a dairy-free version, use oat milk and dairy-free white chocolate chips. To make ahead, toast a larger batch of white chocolate chips and store in an airtight container for up to a week.
