This quick 5-ingredient apple crisp for two is the perfect weeknight dessert, ready in under 30 minutes with simple pantry staples. It features tender, cinnamon-spiced apples topped with a crispy, buttery oat crumble.

Ingredients

Scale
  • 2 medium apples (such as Honeycrisp and Granny Smith)
  • ½ cup rolled oats
  • ¼ cup all-purpose flour
  • ¼ cup packed brown sugar
  • 3 tablespoons cold unsalted butter, cut into small cubes
  • Optional: pinch of cinnamon, squeeze of lemon juice, tiny pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C). Position a rack in the middle of the oven.
  2. Wash the apples. If desired, peel them. Core the apples and slice into ¼-inch thick pieces. Place the slices directly into two 6-ounce ramekins or a small baking dish.
  3. In a medium mixing bowl, combine the rolled oats, all-purpose flour, and packed brown sugar. Stir with a fork, breaking up any lumps.
  4. Add the cold butter cubes to the bowl. Using a pastry cutter, two forks, or your fingers, cut the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized butter pieces remaining (about 2-3 minutes).
  5. Sprinkle the oat topping evenly over the apples. Do not pack it down.
  6. Place the ramekins or dish on a baking sheet and bake for 20-25 minutes, until the topping is golden brown and the apples are bubbling around the edges. If the topping browns too quickly, tent loosely with foil for the last 5 minutes.
  7. Let the crisp rest for 5 minutes before serving to allow the juices to thicken.
  8. Serve warm, optionally with vanilla ice cream, whipped cream, or a drizzle of heavy cream.

Notes

For best results, use cold butter and cut apples evenly. Let the crisp rest for 5 minutes after baking. To make ahead, prepare the topping and store it in the fridge separately from the sliced apples; assemble just before baking. For a gluten-free version, swap all-purpose flour with a 1:1 gluten-free flour blend or almond flour. For a vegan version, replace butter with a plant-based alternative like Miyoko’s or Earth Balance.
