  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 teaspoon baking powder
  • 1 ½ cups (225 g) blueberries (fresh or frozen)
  • 1 tablespoon turbinado sugar (optional, for topping)
  • ¼ cup (30 g) sliced almonds (optional, for topping)

Instructions

  1. Grease an 8×8-inch baking dish with butter or cooking spray. Optionally, line with parchment paper for easy cleanup.
  2. In a large bowl, whisk together milk, eggs, maple syrup, melted butter, and vanilla extract until smooth and pale golden.
  3. Add rolled oats, cinnamon, salt, and baking powder. Stir with a spatula until combined. The mixture will be thin.
  4. Gently fold in the blueberries. If using frozen berries, work quickly to avoid turning the mixture purple.
  5. Pour the mixture into the prepared baking dish and spread evenly. If using, sprinkle turbinado sugar and sliced almonds on top.
  6. Cover tightly with plastic wrap or a lid and refrigerate for at least 6 hours, or up to 12 hours.
  7. The next morning, remove the dish from the fridge and let it sit at room temperature for 10 minutes while the oven preheats to 375°F (190°C).
  8. Bake uncovered for 35-40 minutes, until the top is golden brown and the edges are set. The center may jiggle slightly but will set as it cools.
