A quick and easy homemade appetizer featuring a crispy flatbread topped with creamy goat cheese, fresh figs, salty prosciutto, and a drizzle of honey for a perfect balance of sweet and savory flavors.

  • 2 cups (240 g) all-purpose flour, unbleached preferred
  • 1 tsp (3 g) instant yeast
  • ¾ cup (180 ml) warm water, about 110°F (43°C)
  • 2 tbsp (30 ml) extra virgin olive oil
  • 1 tsp (6 g) salt
  • 6 oz (170 g) goat cheese, softened
  • 2 oz (56 g) cream cheese, room temperature (optional)
  • 68 medium fresh figs, sliced
  • 4 oz (115 g) prosciutto, thinly sliced
  • 2 tbsp (30 ml) honey, preferably wildflower or orange blossom
  • 1 tsp fresh thyme leaves (optional)
  • Freshly ground black pepper, to taste

Instructions

  1. In a large mixing bowl, whisk together flour, instant yeast, and salt.
  2. Slowly add warm water and olive oil, stirring until dough starts to come together (about 5 minutes).
  3. Transfer dough to a lightly floured surface and knead for 7-10 minutes until smooth and elastic.
  4. Place dough in a lightly oiled bowl, cover with a damp towel, and let rise in a warm spot for 45-60 minutes until doubled in size.
  5. Preheat oven to 475°F (245°C) and place pizza stone inside if using.
  6. In a small bowl, mix goat cheese and cream cheese until smooth and spreadable.
  7. Punch down risen dough and roll out on parchment paper into a 12×8 inch oval or rectangle about ¼ inch thick.
  8. Transfer dough on parchment to baking sheet or pizza stone and bake for 5-7 minutes until surface sets and begins to turn golden.
  9. Remove crust from oven and spread cheese mixture evenly, leaving a small border.
  10. Arrange sliced figs and torn prosciutto evenly on top, sprinkle with thyme and black pepper.
  11. Return flatbread to oven and bake for another 7-10 minutes until crust is golden and toppings warmed through.
  12. Drizzle honey over hot flatbread before slicing and serving warm or at room temperature.

Notes

Preheat baking surface to ensure a crispy crust. Mix goat cheese with cream cheese for a smoother spread. Add figs after baking if very ripe to avoid overcooking. Drizzle honey after baking to preserve floral notes. Dough can be made ahead and refrigerated up to 24 hours.
