Perfect Grilled Peaches Recipe with Bourbon Vanilla Bean Ice Cream

A quick and easy summer dessert featuring caramelized grilled peaches brushed with a cinnamon-honey glaze, served with rich bourbon vanilla bean ice cream for a sweet and smoky flavor combination.

  • 4 ripe but firm peaches, halved and pitted
  • 2 tablespoons honey
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon unsalted butter, melted
  • 1 teaspoon lemon juice
  • About 4 scoops bourbon vanilla bean ice cream

Instructions

  1. Rinse and pat dry the peaches. Slice each peach in half and remove the pit carefully. Lightly brush the cut sides with lemon juice to prevent browning.
  2. In a small mixing bowl, whisk together honey, ground cinnamon, and melted butter until combined.
  3. Preheat your grill to medium-high, around 375°F (190°C).
  4. Using a brush, generously coat the cut sides of each peach half with the honey-cinnamon glaze. Flip them over and lightly brush the skin side as well.
  5. Place the peaches cut side down on the grill. Grill for about 3 to 4 minutes until you see nice grill marks and the peaches start to soften but still hold their shape. Flip carefully using tongs. Grill the skin side for another 2 to 3 minutes.
  6. Transfer the grilled peaches to a serving plate and let rest for about 2 minutes.
  7. Immediately scoop the bourbon vanilla bean ice cream on top or on the side of each peach half and serve.

Notes

Choose firm but ripe peaches to prevent them from becoming mushy on the grill. Preheat the grill well to get perfect sear marks and prevent sticking. Use indirect heat if flare-ups occur. Serve immediately for best texture and flavor. For dairy-free, substitute butter with coconut oil and use coconut milk-based vanilla ice cream.
