These fun and festive Frankenstein Rice Krispie Treats combine a classic crispy marshmallow base with creamy green cream cheese frosting and detailed black icing bolts, perfect for Halloween parties and last-minute sweet cravings.

  • 6 cups Rice Krispies cereal (or any crisped rice cereal)
  • 10 oz mini marshmallows
  • 3 tbsp unsalted butter (room temperature)
  • 1 tsp vanilla extract (optional)
  • 4 oz cream cheese, softened
  • 1 cup powdered sugar, sifted
  • 2 tbsp unsalted butter, softened
  • 12 tbsp milk or heavy cream
  • Green gel food coloring
  • Black decorating icing or black gel icing pen
  • Mini chocolate chips or edible eyes (optional)

Instructions

  1. Lightly grease a 9×13-inch baking pan with butter or line it with parchment paper and set aside.
  2. In a large saucepan over low heat, melt 3 tablespoons of unsalted butter. Add mini marshmallows and stir continuously until melted and smooth, about 5 minutes. Remove from heat and stir in vanilla extract if using.
  3. Pour in 6 cups of Rice Krispies cereal and gently fold until every flake is coated, about 1-2 minutes. Work quickly before mixture sets.
  4. Transfer mixture to prepared pan and press evenly and firmly to about 1-inch thickness using a buttered spatula or wax paper. Let cool completely, about 30-40 minutes at room temperature.
  5. While treats cool, beat together 4 oz softened cream cheese and 2 tbsp softened butter with an electric mixer until creamy. Gradually add 1 cup powdered sugar and beat until smooth. Add 1-2 tbsp milk or cream to reach spreadable consistency. Mix in green gel food coloring until desired shade is achieved.
  6. Spread green frosting evenly over cooled Rice Krispie base to about 1/4 inch thickness.
  7. Using black decorating icing or a piping bag, draw Frankenstein bolts and other details on the edges of each treat. Add mini chocolate chips or edible eyes if desired.
  8. Refrigerate treats for at least 15 minutes to let frosting set before cutting into squares. Use a sharp knife warmed in hot water for cleaner edges. Serve at room temperature.

Notes

Keep heat low when melting marshmallows to avoid burning. Press the cereal mixture lightly to keep treats chewy and airy. Cool treats completely before frosting to prevent melting. Use gel food coloring for vibrant frosting without thinning. Warm knife before cutting for clean edges. Frosting can be mixed by hand if no mixer is available.
