  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1 cup (170g) semi-sweet or dark chocolate chips

Instructions

  1. Brown the butter: Melt butter in a medium saucepan over medium heat, stirring constantly until milk solids turn golden brown and it smells nutty (about 5 minutes). Pour into a heat-safe bowl and let cool for 10 minutes.
  2. Mix wet ingredients: In a large mixing bowl, whisk the cooled brown butter, granulated sugar, eggs, and vanilla extract until smooth and slightly pale.
  3. Add pumpkin: Stir in the pumpkin puree until fully incorporated.
  4. Combine dry ingredients: In a separate medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and ginger.
  5. Combine wet and dry: Gradually add the dry ingredients to the wet ingredients. Use a spatula to fold them together until the flour just disappears. Do not overmix.
  6. Fold in chocolate: Gently fold in the chocolate chips, distributing them evenly.
  7. Bake: Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line with parchment paper. Pour in batter and smooth the top. Bake for 45-50 minutes until a toothpick inserted in the center comes out clean.
  8. Cool: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Ensure you use pure pumpkin puree, not pumpkin pie filling. Measure flour by spooning it into the cup and leveling it off to avoid a dry loaf. If the top browns too quickly, tent with foil. The bread improves in flavor after sitting for a day.
