A stress-free, make-ahead turkey breast recipe featuring a glossy, ruby-red pomegranate glaze that keeps the meat juicy and flavorful. Perfect for holiday hosting or busy weeknights.

  • 1 boneless, skin-on turkey breast
  • 1 cup 100% pure pomegranate juice
  • 1/2 cup dark brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • 4 cloves fresh garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 tablespoons extra virgin olive oil
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste

Instructions

  1. Preheat oven to 325°F (165°C). Pat the turkey breast dry with paper towels and season generously with salt and pepper on all sides.
  2. In a small saucepan, combine pomegranate juice, brown sugar, apple cider vinegar, honey, minced garlic, rosemary, and thyme. Bring to a simmer over medium heat and cook for 10 minutes until slightly thickened. Remove from heat and stir in olive oil.
  3. Place the turkey in a roasting pan. Brush half of the glaze over the entire surface of the turkey, getting under the skin if possible.
  4. Roast the turkey for 30 minutes.
  5. Remove the pan from the oven and brush the remaining glaze over the turkey.
  6. Return to the oven and roast for another 30-40 minutes, or until the internal temperature reaches 155°F (68°C).
  7. Remove the turkey from the oven and tent loosely with foil. Let it rest for at least 15 minutes.
  8. Slice the turkey against the grain and serve with any remaining warm glaze.

Notes

If the glaze starts to look too dark, cover the turkey loosely with foil to prevent burning. Ensure the turkey is completely thawed if using frozen meat. The internal temperature will rise to 165°F (74°C) as it rests.
