This loaded football charcuterie board is designed to be the star of your game day spread without causing you any stress. It’s a quick and easy, no-cook appetizer that feeds a crowd and is guaranteed to get people talking before the first touchdown.

  • 8 oz hard salami, sliced thin
  • 8 oz pepperoni, sliced
  • 6 oz prosciutto or capicola
  • 8 oz sharp cheddar cheese, cut into 1-inch cubes
  • 8 oz provolone cheese, sliced and then cut into triangles
  • 4 oz fresh mozzarella pearls
  • 4 oz creamy goat cheese or brie (optional)
  • 1 cup assorted crackers
  • 1 cup pretzel sticks or mini pretzels
  • 1/2 cup mixed nuts
  • 1/2 cup pitted green olives, drained
  • 1/2 cup Kalamata olives, drained
  • 1/2 cup grape tomatoes, halved
  • 1/4 cup cornichons or small pickles
  • Fresh rosemary sprigs or fresh thyme (for garnish, optional)
  • 12 long strips of fresh mozzarella or white cheddar (for laces)
  • A small bowl of honey or whole-grain mustard (optional)

Instructions

  1. Prepare your board. Place your large cutting board or platter on a clean, flat surface. Visualize a football shape (a stretched oval) in the center.
  2. Create the football outline with meat. Fold your salami and pepperoni slices in half or quarters. Arrange them along the outer edge of your imagined football shape. Use the prosciutto or capicola to fill in any gaps at the ends.
  3. Add the cheese cubes. Scatter the cheddar cubes and provolone triangles inside the meat border. Leave a small open space in the very center for your dip or bowl.
  4. Place the ‘laces.’ Using a vegetable peeler or knife, create two long, thin strips of fresh mozzarella or white cheddar. Lay these parallel to each other down the center of the football, about 2 inches apart. Cut 4-5 shorter strips to lay horizontally between them.
  5. Fill in the gaps with crunch. Pour your crackers, pretzels, and nuts into the remaining empty spaces around the cheese and meat.
  6. Add color with olives and tomatoes. Place small piles of green olives, Kalamata olives, and halved grape tomatoes in clusters around the board. Add the cornichons in a small pile near one end.
  7. Set the centerpiece. Place a small ramekin or bowl in the center of the football. Fill it with honey, whole-grain mustard, or a spicy pepper jelly.
  8. Garnish and serve. Tuck a few sprigs of fresh rosemary around the edges of the board. Serve immediately or cover with plastic wrap and refrigerate for up to 2 hours. If chilling, add the crackers and nuts just before serving.
