Lighter Sweet Potato Casserole with Pecan Crumble

A lighter, make-ahead sweet potato casserole with a crunchy pecan crumble topping. Creamy, lightly sweet, and perfect for holidays or meal prep.

  • 3 pounds sweet potatoes, peeled and cubed (about 6 medium)
  • 1/2 cup plain Greek yogurt
  • 3 tablespoons pure maple syrup
  • 2 large eggs, room temperature
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon freshly grated nutmeg
  • 1/2 teaspoon salt
  • 1 cup chopped pecans
  • 1/2 cup rolled oats
  • 1/4 cup coconut sugar
  • 3 tablespoons solid coconut oil, cut into small pieces
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 400°F (200°C). Peel and cube sweet potatoes into 1-inch pieces. Toss with 1 tablespoon melted coconut oil and a pinch of salt. Roast on a baking sheet for 35-40 minutes, flipping halfway, until fork-tender and edges caramelize. Let cool 10 minutes.
  2. Transfer roasted sweet potatoes to a large bowl. Mash with a potato masher or hand mixer until mostly smooth. Add Greek yogurt, maple syrup, eggs, melted coconut oil, vanilla, cinnamon, nutmeg, and salt. Mix until well combined and smooth.
  3. In a medium bowl, combine chopped pecans, rolled oats, coconut sugar, cinnamon, and salt. Add solid coconut oil pieces. Use fingers or a pastry cutter to work oil into dry ingredients until crumbly with pea-sized clumps.
  4. Grease a 9×13-inch baking dish with coconut oil or butter. Spread sweet potato mixture evenly. Sprinkle pecan crumble on top in an even layer. Do not press down. Cover and refrigerate up to 2 days if making ahead.
  5. When ready to bake, preheat oven to 350°F (175°C). If refrigerated, let sit at room temperature for 15 minutes. Bake uncovered for 30-35 minutes until filling is set and crumble is golden brown. Let rest 5-10 minutes before serving.

Notes

Roasting sweet potatoes instead of boiling concentrates sweetness and prevents waterlogging. Room temperature eggs are important to prevent coconut oil from seizing. Toast pecans for deeper flavor. Let casserole rest after baking to set. Can be made up to 2 days ahead.
