These no-bake avalanche cookies are a quick and easy treat made with just four ingredients: peanut butter, chocolate chips, butterscotch chips, and mini marshmallows. Ready in under 15 minutes, they are perfect for satisfying a sweet craving without turning on the oven.

Ingredients

Scale
  • 1 cup creamy peanut butter (e.g., Jif or Skippy)
  • 1 cup semi-sweet chocolate chips (e.g., Ghirardelli or Nestlé Toll House)
  • 1 cup butterscotch chips
  • 2 cups mini marshmallows
  • Optional: 1/2 cup chopped peanuts
  • Optional: sea salt flakes for sprinkling
  • Optional: 1/4 cup shredded coconut (toasted)

Instructions

  1. Line a baking sheet with parchment paper or wax paper. Set aside.
  2. In a medium saucepan over low heat, combine peanut butter, chocolate chips, and butterscotch chips. Stir constantly until completely smooth and melted, about 3-4 minutes.
  3. Remove from heat and let cool for 2 minutes.
  4. Gently fold in the mini marshmallows until evenly coated. Do not overmix.
  5. Drop spoonfuls (about 1.5 tablespoons each) onto the prepared baking sheet, leaving about 1 inch between cookies.
  6. Optional: Sprinkle with sea salt immediately after dropping.
  7. Let cookies set at room temperature for about 30 minutes, or refrigerate for 15 minutes until firm.

Notes

Use low heat to prevent chocolate from burning. Let mixture cool for 2 minutes before adding marshmallows to prevent them from melting. Use fresh marshmallows for best texture. Cookies can be stored at room temperature for up to 1 week, refrigerated for 2-3 weeks, or frozen for up to 3 months. For uniform cookies, use a cookie scoop.
