Kid-Approved Crockpot Taco Soup: Easy Ranch & Black Bean Recipe

This easy crockpot taco soup combines ground beef, black beans, corn, and a secret blend of ranch and taco seasonings for a creamy, tangy, and comforting meal that kids and adults alike will love. With just 10 minutes of prep, it’s the ultimate set-it-and-forget-it dinner for busy weeknights.

  • 1 pound ground beef (or ground turkey)
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 2 (15-ounce) cans black beans, drained and rinsed
  • 1 (15-ounce) can corn, drained (or 1.5 cups frozen corn)
  • 1 (15-ounce) can diced tomatoes with green chilies (like Rotel)
  • 1 (15-ounce) can tomato sauce
  • 1 (1-ounce) packet ranch seasoning mix
  • 1 (1-ounce) packet taco seasoning mix
  • 2 cups beef broth (low-sodium preferred)
  • Optional toppings: shredded cheddar cheese, sour cream, sliced green onions, crushed tortilla chips, fresh cilantro

Instructions

  1. Brown the ground beef (5-7 minutes): Heat a large skillet over medium-high heat. Add the ground beef and diced onion. Cook, breaking the meat apart with a wooden spoon, until the beef is no longer pink. Drain off excess fat, leaving about 1 tablespoon for flavor if desired.
  2. Add the garlic (1 minute): Stir in the minced garlic and cook for about 1 minute until fragrant. Be careful not to burn it.
  3. Transfer to the slow cooker: Scoop the beef and onion mixture into a 6-quart slow cooker.
  4. Add the canned goods: Dump in the drained black beans, drained corn, diced tomatoes with green chilies, and tomato sauce. Do not drain the tomatoes.
  5. Add the seasonings: Sprinkle the ranch seasoning mix and taco seasoning mix over the top.
  6. Pour in the broth: Add the 2 cups of beef broth. Stir everything together gently until the seasonings are mostly dissolved.
  7. Cook low and slow: Cover the slow cooker and cook on LOW for 6-8 hours or on HIGH for 3-4 hours. The soup is ready when hot, bubbly, and the beans are tender.
  8. Finish and serve: Give the soup a good stir. Taste and add salt and pepper if needed. Ladle into bowls and let everyone add their own toppings.

Notes

For a thicker soup, mash half a cup of black beans before adding. To save time, brown the beef and chop the onion the night before. If you forget to drain the beans, the soup will be starchier but still edible. Use low-sodium broth and unsalted canned beans to control salt. The soup can be frozen for up to 3 months.
