  • 1/2 cup (1 stick) unsalted butter, softened
  • 45 cloves fresh garlic, minced
  • 2 tablespoons fresh rosemary, chopped (or 2 teaspoons dried)
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
  • 1 tablespoon fresh sage, chopped (optional)
  • Zest of 1 lemon
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 (4-5 pound) bone-in, skin-on turkey breast
  • 1 tablespoon olive oil
  • Salt and pepper, for seasoning the outside
  • 1 cup chicken or turkey broth
  • 1 medium yellow onion, quartered
  • 2 medium carrots, roughly chopped
  • 2 stalks celery, roughly chopped

Instructions

  1. Take the turkey out of the fridge 45 minutes before cooking. Pat it completely dry with paper towels.
  2. In a small bowl, combine the softened butter, minced garlic, chopped rosemary, thyme, sage, lemon zest, salt, and pepper. Mash together with a fork until evenly distributed.
  3. Using your fingers, gently separate the turkey skin from the meat, starting at the top of the breast and working down. Be careful not to tear the skin.
  4. Spread about two-thirds of the herb butter directly onto the meat under the skin. Spread the remaining butter all over the outside of the skin.
  5. Drizzle olive oil over the skin and rub it in. Sprinkle generously with salt and pepper.
  6. Place the quartered onion, chopped carrots, and celery in the bottom of a roasting pan. Pour the broth over them.
  7. Place the turkey breast on top of the vegetables. If desired, tie the breast crosswise with kitchen twine to help it hold its shape.
  8. Roast at 425°F for 20 minutes.
  9. Reduce the oven temperature to 350°F and continue roasting for 45-55 minutes, or until the internal temperature reaches 160°F in the thickest part. Baste with pan juices every 20 minutes.
  10. Remove from the oven, tent loosely with foil, and let rest for 15-20 minutes before carving. The temperature will rise to 165°F as it rests.

Notes

For best results, use an instant-read thermometer to ensure the turkey reaches 165°F. If the skin browns too quickly, tent with foil. Let the turkey rest before carving to keep it juicy. The herb butter can be made up to 3 days in advance.
