  • 2 large Eggs (room temperature)
  • 1/3 cup Honey or Maple Syrup
  • 1/4 cup Coconut Oil (melted)
  • 1 tsp Vanilla Extract
  • 1 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1/4 tsp Ground Ginger
  • 1/2 tsp Salt
  • 1/2 cup Chopped Walnuts or Pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with liners or grease lightly.
  2. Prepare oats by pulsing in a food processor for a finer texture or leaving whole for a chewy bite.
  3. In a large bowl, whisk together oats, baking soda, baking powder, cinnamon, nutmeg, ground ginger, and salt.
  4. In a separate medium bowl, whisk eggs. Add Greek yogurt, pumpkin puree, melted coconut oil, honey/maple syrup, and vanilla extract. Whisk until smooth.
  5. Pour wet mixture into dry ingredients. Gently fold together with a spatula until just moistened; do not overmix.
  6. Fold in optional mix-ins like walnuts or pecans.
  7. Divide batter evenly among muffin cups, filling each about 2/3 full.
  8. Bake for 20-25 minutes until a toothpick inserted into the center comes out clean.
  9. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Ensure pumpkin puree is 100% pure, not pie filling. Do not overmix the batter to avoid tough muffins. If pumpkin puree is watery, drain it first. Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
