These Caramel Chocolate Pretzel Bites with Toasted Pecans are salty, sweet, crunchy, and completely addictive. Quick and easy to make in under 30 minutes, they are the perfect crowd-pleaser for any gathering.

Ingredients

  • Mini pretzel twists (about 60 pieces)
  • Caramel candies (14 ounces, about 50 pieces)
  • Heavy cream (3 tablespoons)
  • Semi-sweet chocolate chips (1 cup, about 6 ounces)
  • Pecan halves (1 cup, roughly chopped)
  • Coconut oil or shortening (1 teaspoon, optional)
  • Flaky sea salt (optional, for finishing)

Instructions

  1. Preheat your oven to 350°F (175°C). Spread the chopped pecans in a single layer on a small baking sheet. Toast for 5-7 minutes, shaking the pan halfway through, until fragrant and slightly darker. Let cool completely.
  2. Line two baking sheets with parchment paper. Arrange the mini pretzel twists in a single layer, about 1 inch apart.
  3. Unwrap all the caramel candies and place them in a small saucepan with the heavy cream. Heat over medium-low heat, stirring constantly, until completely smooth (about 5-6 minutes).
  4. Working quickly, spoon about 1/2 teaspoon of caramel onto the center of each pretzel, leaving a small border of pretzel showing.
  5. While the caramel is still warm, press a few toasted pecan pieces into each caramel dollop.
  6. Place the baking sheets in the refrigerator for 10 minutes to let the caramel firm up.
  7. Meanwhile, melt the chocolate chips in a microwave-safe bowl in 30-second intervals at 50% power, stirring well after each interval, until smooth. If using, add coconut oil before melting.
  8. Remove the pretzels from the fridge. Using a small spoon, drizzle or dollop about 1/2 teaspoon of melted chocolate over the caramel and pecans.
  9. If desired, sprinkle a tiny pinch of flaky sea salt over the chocolate while it’s still wet.
  10. Return the baking sheets to the refrigerator for 15-20 minutes, or until the chocolate is completely set.

Notes

Toast pecans carefully to avoid burning. Keep caramel warm but not hot. Work in batches for best results. Use good quality chocolate. Let bites set fully before serving. Can be made a day ahead and stored in an airtight container in the fridge.
