Fresh Watermelon Feta Salad Recipe with Easy Mint Lime Dressing

A refreshing summer salad combining sweet watermelon, salty feta, and a bright mint lime dressing. Perfect for warm weather gatherings or a quick, light lunch.

  • 4 cups seedless watermelon, cubed into bite-sized pieces
  • 1 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves, finely chopped
  • Juice of 2 medium limes (about 3 tablespoons)
  • 1 tablespoon honey
  • 2 tablespoons extra-virgin olive oil
  • Pinch of salt
  • Freshly ground black pepper, to taste
  • Optional: thinly sliced red onion
  • Optional: toasted pine nuts

Instructions

  1. Cut about 4 cups (about 600g) of seedless watermelon into 1-inch (2.5 cm) cubes and transfer to a large mixing bowl.
  2. In a small bowl or jar, combine 1/4 cup chopped fresh mint leaves, juice of 2 limes (approximately 3 tablespoons), 1 tablespoon honey, 2 tablespoons extra-virgin olive oil, a pinch of salt, and freshly ground black pepper to taste. Shake or whisk until well blended and slightly emulsified.
  3. Pour the dressing over the watermelon cubes and toss gently but thoroughly to coat evenly, being careful not to smash the watermelon.
  4. Sprinkle 1 cup (about 150g) of crumbled feta over the dressed watermelon. Fold in gently or leave on top for presentation. Add optional thinly sliced red onions or toasted pine nuts if desired.
  5. Chill the salad in the refrigerator for at least 15 minutes before serving to allow flavors to meld. Serve cold.

Notes

Use ripe watermelon for best sweetness. Chill salad before serving to enhance flavors and texture. Keep dressing separate if preparing ahead to avoid sogginess. Fresh lime juice is preferred over bottled for brighter flavor. Crumble feta by hand for better texture.
