  • 4 cups fresh watermelon, cubed (seedless if possible; small sweet varieties like Sugar Baby preferred)
  • 1 cup feta cheese, crumbled (sheep’s milk feta recommended)
  • 1/4 cup fresh mint leaves, roughly chopped
  • 1/4 cup thinly sliced red onion (optional)
  • 3 tablespoons balsamic glaze (store-bought or homemade by reducing 1/2 cup balsamic vinegar with 1 tablespoon honey)
  • 1 tablespoon extra virgin olive oil
  • Freshly cracked black pepper, to taste
  • Sea salt, just a pinch

Instructions

  1. Prepare the watermelon: Cut watermelon into roughly 1-inch cubes and place in a large mixing bowl.
  2. Slice the onion: Thinly slice red onion into rings, soak in cold water for 5 minutes if desired, then drain and add to the watermelon.
  3. Chop the mint: Stack mint leaves, roll into a cigar shape, slice thinly (chiffonade), and add to the bowl.
  4. Add the feta: Crumble feta cheese over the salad.
  5. Mix the dressing: Whisk together balsamic glaze and olive oil in a small bowl. Season with sea salt and black pepper.
  6. Toss the salad: Pour dressing over the watermelon mixture and gently toss to coat evenly.
  7. Final touches: Taste and adjust seasoning if needed. Serve immediately or chill for 10-15 minutes before serving.

Notes

Use ripe, small sweet watermelon for best flavor. Dry mint leaves thoroughly to avoid sogginess. Add dressing just before serving to keep watermelon crisp. For vegan option, substitute feta with dairy-free cheese or toasted nuts. Balsamic glaze can be homemade by reducing balsamic vinegar with honey.
