A refreshing and easy-to-make summer drink combining fresh strawberries, lemon juice, and mint for a perfect balance of sweet and tart flavors.

Ingredients

Scale
  • 1 pound (450 grams) fresh strawberries, hulled and halved
  • 4 to 5 medium fresh lemons, juiced (about 1 cup / 240 ml lemon juice)
  • 3/4 cup (150 grams) granulated sugar
  • 4 cups (960 ml) water, divided
  • 1520 fresh mint leaves
  • Ice cubes for serving
  • Optional: sparkling water to top off for fizz
  • Optional: lemon slices and whole strawberries for garnish

Instructions

  1. Make the simple syrup: In a small saucepan, combine 3/4 cup granulated sugar with 1 cup water. Heat over medium, stirring frequently until sugar dissolves completely. Remove from heat and let cool to room temperature.
  2. Prepare the strawberries: Wash, hull, and halve about 1 pound of fresh strawberries. Reserve a handful of whole strawberries for garnish if desired.
  3. Puree the strawberries: Place about two-thirds of the strawberries into a blender or food processor with 1 cup water. Blend until smooth but still slightly textured.
  4. Muddle the mint: In a pitcher, gently muddle the fresh mint leaves with a spoon or muddler just enough to release their oils without bruising.
  5. Combine the lemonade: Add freshly squeezed lemon juice and the cooled simple syrup to the pitcher with the mint. Pour in the strawberry puree and the remaining 2 cups of cold water. Stir well to combine.
  6. Chill and taste: Refrigerate the lemonade for at least 10 minutes to let flavors meld. Adjust sweetness or tartness by adding more syrup or lemon juice if needed.
  7. Serve: Fill glasses with ice cubes, pour the strawberry lemonade over, and garnish with whole strawberries and a sprig of mint. Optionally, add a splash of sparkling water for fizz.

Notes

Gently muddle mint leaves to avoid bitterness. Use freshly squeezed lemon juice for best flavor. Chill lemonade for at least 10 minutes before serving to allow flavors to meld. Adjust sweetness to taste. Optional sparkling water adds a fizzy twist. Store leftovers in an airtight container in the fridge for up to 3 days.
