Fresh Caprese Skewers with Basil Bliss

A quick and easy appetizer featuring cherry tomatoes, fresh mozzarella, and basil leaves on skewers, served with a vibrant homemade basil bliss sauce. Perfect for entertaining and light summer bites.

  • 1 pint cherry tomatoes (about 300g), preferably ripe and firm
  • 8 ounces fresh mozzarella balls (bocconcini), drained
  • 1 cup loosely packed fresh basil leaves, washed and patted dry
  • For the Basil Bliss Sauce:
  • 1 cup fresh basil leaves, packed
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 small garlic clove, minced
  • Salt and freshly ground black pepper, to taste
  • Optional: 1 teaspoon honey or maple syrup
  • About 16 bamboo skewers, 4-inch size

Instructions

  1. Prepare the Ingredients (10 minutes): Rinse and gently dry the cherry tomatoes and fresh basil leaves. Drain the mozzarella balls and pat them dry with paper towels to prevent excess moisture.
  2. Make the Basil Bliss Sauce (5 minutes): In a food processor or blender, combine 1 cup of fresh basil leaves, 1/4 cup extra virgin olive oil, 1 tablespoon lemon juice, the minced garlic clove, and a pinch of salt and pepper. Blend until smooth and creamy. Taste and adjust seasoning—add a teaspoon of honey if desired. If the sauce is too thick, add a little more olive oil or a splash of water to loosen it up.
  3. Assemble the Skewers (10 minutes): Thread one cherry tomato, followed by a folded basil leaf, then a mozzarella ball, and finish with another cherry tomato onto each bamboo skewer. Repeat the pattern if skewers are longer for a colorful presentation.
  4. Drizzle and Serve: Arrange the skewers on a serving platter and drizzle generously with the basil bliss sauce. Alternatively, serve the sauce on the side for dipping. Optionally, sprinkle flaky sea salt or cracked black pepper on top.

Notes

Choose firm, ripe tomatoes to avoid soggy skewers. Dry mozzarella well to prevent watery sauce. Do not over-blend basil sauce to keep vibrant flavor. Assemble skewers in batches for speed. Add basil leaves last to prevent wilting. Sauce can be made ahead and stored for 2-3 days. For grilling, cook 1-2 minutes per side over medium heat carefully to avoid melting cheese.
