  • 1 medium fresh pineapple, peeled, cored, and cut into rings or wedges
  • 1/4 cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons melted butter or coconut oil (optional)
  • Juice of half a lime
  • Pinch of sea salt (optional)

Instructions

  1. Peel the pineapple with a sharp knife, removing the top, bottom, skin, and eyes. Core the pineapple and slice into 1/2-inch thick rings or wedges.
  2. In a mixing bowl, combine brown sugar, ground cinnamon, and melted butter or coconut oil. Stir until smooth and spreadable.
  3. Preheat grill to medium-high heat (about 375°F). Clean the grates to prevent sticking.
  4. Using a basting brush, coat each pineapple slice generously with the sugar and cinnamon mixture on both sides.
  5. Place pineapple slices on the grill and cook for 4-5 minutes per side, turning once, until grill marks and caramelization appear. Move slices to cooler parts of the grill if sugar starts to burn.
  6. Remove from grill and squeeze fresh lime juice over the pineapple. Sprinkle with a pinch of sea salt if desired.
  7. Serve warm immediately as a side dish, dessert, or atop vanilla ice cream.

Notes

Use ripe but firm pineapple for best texture. Melted butter or coconut oil helps sugar stick and prevents burning. Watch grill heat carefully to avoid burning sugar. Pineapple can be prepped and coated up to 2 hours ahead and refrigerated. For vegan version, substitute butter with coconut oil. If no grill available, broil pineapple slices in oven for 3-4 minutes per side.
