Flavorful Firecracker Hot Dog Sliders with Spicy Mayo

These sliders feature blistered mini hot dogs with a creamy, spicy mayo and toasted garlic butter buns, perfect for quick casual gatherings and game nights.

  • 12 mini hot dog sausages (Hebrew National recommended)
  • 12 slider buns or small soft rolls (King’s Hawaiian style suggested)
  • 2 tablespoons unsalted butter
  • 1 teaspoon garlic powder (divided)
  • 1 tablespoon vegetable oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 cup mayonnaise (Hellmann’s recommended)
  • 1 tablespoon sriracha sauce
  • 1 teaspoon fresh lime juice
  • Pinch of salt
  • Optional toppings: pickled jalapeños, shredded lettuce or cabbage, diced red onions, cheddar cheese slices

Instructions

  1. Prepare the spicy mayo by combining 1/2 cup mayonnaise, 1 tablespoon sriracha, 1 teaspoon lime juice, 1/2 teaspoon garlic powder, and a pinch of salt in a small bowl. Stir well and chill for about 10 minutes.
  2. Melt 2 tablespoons butter and stir in 1 teaspoon garlic powder in a separate small bowl. Set aside for spreading on buns.
  3. Pat the mini sausages dry and toss with 1 tablespoon vegetable oil, 1 teaspoon smoked paprika, and 1/2 teaspoon cayenne pepper.
  4. Heat a large skillet or grill pan over medium-high heat. Cook the sausages for 8–10 minutes, turning frequently until evenly browned and blistered.
  5. Slice slider buns horizontally if not pre-sliced. Brush insides with garlic butter mixture. Toast buns buttered side down in a skillet or grill pan over medium heat for 2–3 minutes until golden and fragrant.
  6. Spread about 1 teaspoon of chilled spicy mayo on each bun bottom. Place a hot dog on top, add optional toppings as desired, then add more spicy mayo if preferred. Top with the bun top.
  7. Serve immediately while warm. If holding briefly, cover loosely with foil to retain heat without steaming buns.

Notes

Adjust cayenne and sriracha to control heat level. Use tongs to avoid puncturing sausages to keep them juicy. Toast buns sparingly with butter to avoid sogginess. Spicy mayo can be made up to 2 days ahead and chilled. For vegan or dairy-free versions, substitute vegan mayo and olive oil for butter.
