Ingredients

Scale
  • 1 cup (200g) granulated sugar
  • 1/2 cup (115g) unsalted butter, melted
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 3/4 cup (95g) all-purpose flour (or almond flour for gluten-free)
  • 1/2 cup (45g) unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup (120g) grated zucchini, squeezed dry
  • 1/2 cup (90g) semi-sweet chocolate chips (optional)
  • Flaky sea salt for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch (20×20 cm) square baking pan or line it with parchment paper, leaving some overhang for easy removal.
  2. Grate 1 cup of zucchini using a fine grater or food processor. Place it in a clean kitchen towel and squeeze out as much moisture as possible.
  3. In a large bowl, combine the melted butter and sugar. Beat in the eggs one at a time, then stir in the vanilla extract until the mixture is shiny and smooth.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Avoid overmixing.
  6. Fold in the shredded zucchini and chocolate chips until evenly distributed.
  7. Spread the batter evenly in the prepared pan using a spatula.
  8. Bake for 25-30 minutes, checking doneness by inserting a toothpick in the center; it should come out with a few moist crumbs but no wet batter.
  9. Immediately sprinkle flaky sea salt on top of the hot brownies.
  10. Let the brownies cool completely in the pan on a wire rack before slicing.

Notes

Squeeze out excess moisture from zucchini to avoid soggy brownies. Use quality cocoa powder for best flavor. Avoid overmixing to keep brownies tender. Sprinkle sea salt immediately after baking for best flavor. Rotate pan halfway through baking if oven heats unevenly. Let brownies cool completely before slicing to reduce crumbling.
