  • 2 tablespoons chipotle in adobo sauce, finely chopped
  • 3 tablespoons fresh lime juice (about 2 limes)
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup fresh cilantro, chopped
  • Wooden or metal skewers (optional, soaked if wooden)
  • Lime wedges for garnish (optional)

Instructions

  1. Prepare the marinade: In a medium mixing bowl, combine the chopped chipotle in adobo, lime juice, minced garlic, olive oil, ground cumin, smoked paprika, salt, and black pepper. Whisk until well blended.
  2. Add the shrimp: Toss the peeled and deveined shrimp into the marinade, ensuring each shrimp is fully coated. Cover and refrigerate for 15 to 20 minutes, but no longer than 30 minutes.
  3. Preheat the grill to medium-high heat (about 375°F).
  4. Skewer the shrimp: Thread 4-5 shrimp per skewer, piercing through the tail and thicker part of the body, leaving space between shrimp.
  5. Grill the shrimp skewers for 2-3 minutes per side, turning once, until shrimp are opaque, pink, and slightly charred.
  6. Remove from grill and immediately sprinkle with chopped fresh cilantro. Serve with lime wedges.

Notes

Do not marinate shrimp longer than 30 minutes to avoid mushy texture. Brush grill grates or skewers with oil to prevent sticking. Use a grill pan or broiler if no outdoor grill is available. Fresh cilantro should be added after grilling to preserve flavor.
