This stunning non-alcoholic punch features a beautiful ice ring filled with cranberries and rosemary that slowly releases flavor as it melts. Perfect for holiday gatherings, it’s make-ahead friendly and completely customizable.

Ingredients

Scale
  • 2 cups fresh or frozen cranberries
  • 4–5 large fresh rosemary sprigs
  • 4 cups cranberry juice cocktail (100% juice preferred)
  • 4 cups ginger ale or ginger beer
  • 1 cup freshly squeezed orange juice
  • 2–3 tablespoons simple syrup or honey (optional)
  • 2 cups filtered water (for ice ring)
  • 1–2 lemons, sliced thin

Instructions

  1. Prepare the Ice Ring Base (Day Before or at Least 6 Hours Before Serving): Fill a bundt pan with about 1 inch of filtered water. Arrange half the cranberries (1 cup), 2 rosemary sprigs, and lemon slices in the water. Freeze for about 1 hour until solid.
  2. Add the Second Layer: Once the first layer is solid, add another inch of water. Arrange the remaining cranberries and rosemary sprigs slightly off-center. Freeze for another hour.
  3. Fill and Freeze Completely: Fill the bundt pan to the top with water. Freeze for at least 4 hours, preferably overnight.
  4. Make the Punch Base: In a large pitcher, combine cranberry juice, orange juice, and simple syrup (if using). Stir until sweetener is dissolved. Taste and adjust. Cover and refrigerate until ready to serve (up to 2 days in advance).
  5. Assemble the Punch: About 10 minutes before serving, remove the ice ring from the freezer. Run the bottom of the bundt pan under warm water for 20-30 seconds. Place a plate over the top and flip to release the ice ring.
  6. Pour and Serve: Pour the chilled punch base into a punch bowl. Slowly add the ginger ale, pouring down the side to preserve fizz. Gently place the ice ring in the center. Serve immediately in glasses with additional fresh rosemary sprigs for garnish.

Notes

For clearer ice, boil the water first, let it cool completely, then freeze. Make two ice rings at once for a backup. Keep ginger ale separate until serving to maintain fizz. Chill all ingredients thoroughly before assembling to prevent the ice ring from melting too quickly.
