These refreshing and easy-to-assemble skewers combine juicy watermelon, salty feta, and fresh mint, perfect for summer parties and quick snacks.

Ingredients

  • Seedless watermelon, cut into 1-inch cubes
  • Feta cheese, crumbled or cut into small cubes
  • Fresh mint leaves, whole
  • Extra virgin olive oil, for drizzling (optional)
  • Balsamic glaze, for drizzling
  • Freshly cracked black pepper, to taste
  • Wooden or bamboo skewers, about 6 inches long

Instructions

  1. Rinse and dry the watermelon. Using a sharp knife, cut the watermelon into 1-inch cubes, removing any seeds or rind.
  2. Cut the feta into cubes roughly the same size as the watermelon or crumble it if preferred.
  3. Rinse fresh mint leaves and pat dry with a paper towel.
  4. Thread one cube of watermelon, one mint leaf, and one feta cube onto each skewer. Repeat if skewer length allows, but usually one set per skewer works well.
  5. Lay the skewers on a serving platter. Drizzle lightly with extra virgin olive oil and balsamic glaze. Finish with freshly cracked black pepper.
  6. Serve immediately or chill covered in the refrigerator for up to 2 hours before serving. Let come slightly to room temperature before serving for best flavor.

Notes

Use a very sharp knife to cut watermelon and feta to avoid crushing or crumbling. Drain excess watermelon juice before skewering to prevent soggy bites. Add balsamic glaze just before serving to keep skewers visually appealing. Skewers can be assembled a few hours ahead and refrigerated, but add glaze right before serving. For dairy-free version, substitute feta with firm tofu or nut-based cheese. Variations include adding jalapeño for spice or swapping mint with basil or cilantro.
